Ramos Gin Fizz

- 2 oz East Side Gin
- 3/4 oz Simple Syrup
- 1/2 oz Heavy Cream
- 1/2 oz Freshly Squeezed Lemon Juice
- 1/2 oz Freshly Squeezed Lime Juice
- 3 Dashes Orange Flower Water
- 1 Fresh Egg White
- Chilled Club Soda (for topping)
- Collins Glass
Mix it up
- Dry-Shake: In a shaker, combine the East Side Gin, simple syrup, heavy cream, lemon juice, lime juice, orange flower water, and egg white. Shake vigorously without ice (dry-shake) for at least 3 minutes. This process is crucial for creating the frothy texture.
- Ice Shake: Add ice to the shaker and shake again for at least 30 seconds, ensuring the mixture is well-chilled.
- Straining: Strain the mixture into a Collins glass.
- Topping with Club Soda: Pour a small amount of club soda back and forth between the empty halves of the shaker tins to pick up any residual cream and egg white. Then gently top the drink with this club soda mixture. If the egg white is dense enough, it can be raised out of the glass to create a thick head. Great presentation!
